Stack tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 20 seconds until soft and pliable.

Chop ham slices into small bite-sized pieces to ensure even distribution within the pockets.

Place approximately 60 grams of cheese in the centre of each tortilla, layer with chopped ham, and top with a light sprinkle of additional cheese.

Fold the edges of each tortilla inward, then fold in half to fully enclose the filling. Press the edges firmly to seal.

Set air fryer to 193°C and allow to preheat for 3 minutes.

Brush the tops of the filled pockets with softened butter and sprinkle extra cheese over the surface, pressing gently to help adhere.

Transfer pockets seam-side down into the air fryer basket and cook for 5 minutes, checking midway to ensure even browning.

Carefully remove pockets from the air fryer and let rest for 1–2 minutes before serving, as the filling will be hot.
