Place a warmed tortilla on a flat surface. Layer ½ cup scrambled eggs, ½ cup roasted potatoes, ¼ cup grated cheddar, and ¼ cup crispy bacon or sausage in the center of the tortilla.

Roll the tortilla tightly into a burrito shape. Heat a skillet with a small amount of butter or oil over medium heat and cook burrito until golden brown on both sides, about 2-3 minutes per side. Alternatively, bake at 350°F (175°C) for 10 minutes.
