Preheat oven to 350°F. Line a 9x13-inch baking pan with parchment paper or grease with nonstick spray. In a bowl, sift together 2 1/2 cups flour, powdered sugar, and salt. Add melted butter and stir until well combined. Press dough evenly into pan using the bottom of a measuring cup.

Bake crust for about 20 minutes until edges are lightly golden. Remove from oven and set aside.

In a food processor or stand mixer, combine granulated sugar and lime zest; mix until zest is fully incorporated. Add remaining 1/2 cup flour and pulse again to combine. Mix in lime juice, eggs, and green food coloring until mixture is smooth.

Pour filling evenly over baked crust. Bake for 30 to 40 minutes, rotating pan halfway through. The bars are done when the center no longer jiggles.

Allow bars to cool at room temperature for 1 hour, then chill in refrigerator for at least 2 hours.

Dust bars with powdered sugar before slicing into 16 pieces. Optionally, garnish with additional lime zest. Enjoy chilled.
