Combine warm water, sugar, and active dry yeast in a large bowl. Stir gently and allow to sit 5–10 minutes until frothy.

Add olive oil, all-purpose flour, and salt to the yeast mixture. Stir until a dough forms, then knead for 6–8 minutes until smooth and elastic.

Place dough in a greased bowl, cover, and let rise in a warm area for approximately 1 hour or until doubled in size.

Set oven temperature to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Punch down the dough and divide into 30–40 small pieces. Shape each into squares or small balls.

Arrange bread bites on the prepared baking sheet and bake for 12–15 minutes until golden brown.

Toss hot bread bites in melted garlic butter then sprinkle generously with grated Parmesan cheese. Garnish with chopped parsley if desired and serve warm.
