Heat 3 inches of oil in a deep pot to 375°F. In a bowl, whisk together pancake mix, egg, milk, and 2 teaspoons of oil until mostly smooth. Let batter rest for 5 minutes.

Break each graham cracker sheet in half. Layer one piece with a marshmallow and half a chocolate bar, then top with another graham cracker square. Repeat to assemble all s’mores.

Using tongs, dip each s’more into the batter to coat completely. Gently shake off excess batter.

Lower each coated s’more gently into the hot oil using tongs. Hold for a few seconds to secure. Fry for 3–4 minutes until golden brown.

Remove fried s’mores with a slotted spoon and place on paper towels to drain. Let cool for 5–10 minutes before serving.
