01 -
Heat olive oil or butter in a cast iron skillet over medium-high heat. Add diced onion, bell peppers, Italian seasoning, dried basil, salt, and black pepper.
02 -
Cook, stirring occasionally, for 3-4 minutes until vegetables are softened and fragrant. Remove from heat and set aside.
03 -
Arrange 4 tortillas on a work surface and evenly spread a generous layer of marinara or pizza sauce on each, leaving a border around the edges.
04 -
Distribute sautéed vegetables, sliced pepperoni, and grated mozzarella cheese evenly over the sauce, spreading each layer to the edge.
05 -
Place the remaining tortillas on top of the filled tortillas and press down gently to secure the fillings.
06 -
Heat the skillet over medium heat. Place one assembled quesadilla in the pan and cook for 2-3 minutes until the underside is golden brown and crisp.
07 -
Carefully flip the quesadilla and continue to cook for another 2-3 minutes, until the second side is golden and the cheese is melted.
08 -
Repeat the grilling process with the remaining quesadillas. Allow each to cool briefly, then slice into wedges and serve immediately.
