Homemade Sourdough Pop Tarts (Printer-Friendly)

Flaky sourdough pastries filled with jam, baked golden and finished with a sweet glaze.

# The Ingredients You'll Need:

→ Dough

01 - 1 cup all-purpose flour
02 - 1/4 cup sourdough starter
03 - 1 tablespoon sugar
04 - 1/4 teaspoon salt
05 - 1/4 cup cold unsalted butter, cubed
06 - 2–3 tablespoons cold water

→ Filling

07 - Jam or jelly of choice

→ Glaze

08 - 1 cup powdered sugar
09 - 2–3 tablespoons milk

# Step-by-Step Instructions:

01 - Combine flour, sourdough starter, sugar, and salt in a bowl. Incorporate cold butter until mixture resembles coarse crumbs. Add cold water gradually until dough forms. Knead briefly for smoothness. Wrap and chill for at least 30 minutes.
02 - Roll chilled dough to 1/8-inch thickness on a floured surface. Cut into squares. Place jam on half of each square, fold over, and seal edges firmly with a fork.
03 - Preheat oven to 400°F (200°C). Place pop tarts on parchment-lined sheet. Optional: brush tops with beaten egg for golden finish. Bake for 10-12 minutes until puffed and golden.
04 - Whisk powdered sugar and milk until smooth and pourable.
05 - After cooling, drizzle glaze over pop tarts. Allow glaze to set before serving.

# Extra Tips:

01 - Use cold butter and water to ensure flaky texture. Chilling dough prevents shrinking. Brushing with egg creates a shiny crust but can be omitted for a rustic look. Store leftovers in an airtight container for up to 3 days.
