02 - 1 medium onion, cut into chunks
03 - 1/2 cup red bell pepper, diced
04 - 1/2 cup green bell pepper, diced
05 - 2 cloves garlic, minced

→ Meat

06 - 1 1/2 pounds steak (New York strip, rib eye, or top sirloin), cut into cubes after resting

→ Spices and Seasonings

07 - 2 teaspoons salt, divided
08 - 1 1/2 teaspoons black pepper, divided
09 - 1 teaspoon paprika
10 - 1/2 teaspoon red pepper flakes

→ Oils and Fats

11 - 1/4 cup cooking oil (vegetable or canola), divided

→ Eggs

12 - 4 large eggs

# Step-by-Step Instructions:

01 - Heat a pot of water over medium-high heat. Add the diced Yukon Gold potatoes and bring to a low boil. Cook for 5 minutes, then drain using a strainer and set aside.
02 - Bring steaks to room temperature for 15 minutes. Season both sides with 1 teaspoon salt and 1/2 teaspoon black pepper. Heat 2 tablespoons of oil in a skillet over medium-high heat. Sear steaks for 4 to 5 minutes per side. Transfer to a cutting board and allow to rest for 10 minutes before dicing into cubes.
03 - Add remaining 2 tablespoons of oil to the skillet and reduce heat to medium. Add parboiled potatoes, onions, red and green bell peppers. Season with minced garlic, paprika, red pepper flakes, and remaining salt and black pepper. Cook for 15 minutes, stirring occasionally to prevent sticking or burning.
04 - Add the diced steak to the skillet with the vegetables and potatoes. Stir to combine and cook for an additional 2 to 3 minutes to heat through.
05 - Reduce heat to medium-low. Create four wells in the mixture and crack one egg into each well. Cover the skillet and cook for 3 to 4 minutes, or until eggs reach desired doneness.
06 - Season with additional salt and pepper to taste. Optionally, garnish with fresh parsley or green onions. Serve immediately.

# Extra Tips:

01 - Frozen potatoes may be substituted for fresh; adjust cooking time accordingly.
02 - Covering the skillet helps ensure eggs cook evenly; use a lid, another pan, or aluminum foil if necessary.
03 - For scrambled eggs, whisk with 2 tablespoons milk or cream and cook separately in a nonstick skillet with melted butter, seasoning with salt and pepper.
