In a large bowl, combine the cooked beef, slightly crushed tater tots, cheddar cheese, and monterey jack cheese until evenly mixed.

Heat tortillas in a dry skillet or microwave for 10–15 seconds to make them pliable.

Spoon filling into the center of each tortilla, drizzle with chipotle sauce, and add sour cream.

Fold in the sides, roll tightly from the bottom to form burritos. Place in a baking dish, top with cheese, and bake until cheese is melted and bubbly.

Remove from oven and garnish with tomatoes, green onions, and cilantro. Serve hot with extra sour cream and chipotle sauce.
