In a saucepan over medium-high heat, combine butter, sugar, and eggnog. Stir often and bring to a boil until the mixture reaches exactly 234°F using a candy thermometer.

Remove from heat and stir in white chocolate chips until fully melted and smooth.

Quickly mix in marshmallow fluff, vanilla extract, and ground nutmeg until thick and evenly blended.

Pour mixture into the prepared pan, smooth the top, and optionally sprinkle additional nutmeg. Let cool at room temperature until firm.
