Preheat the oven to 375°F and line a baking sheet with parchment paper.

Unroll the crescent dough onto a flat surface and press seams to seal, forming a single sheet.

If desired, evenly spread Dijon mustard over the dough. Layer with deli ham slices, then top with Swiss cheese slices.

Roll the dough tightly from the long edge into a log. Cut into 12 slices approximately 1 inch thick.

Place the pinwheels on the prepared baking sheet. Brush each with melted butter and sprinkle poppy seeds on top if using.
