Lay the sourdough slices on a flat surface and spread ½ tablespoon of honey mustard evenly on one side of each slice.

Place a half-slice of cheddar cheese on each bread slice, followed by two slices of deli turkey on two of the slices.

Layer the tomato slices and ¼ cup spinach over the turkey-covered slices.

Place two strips of cooked bacon on the remaining cheese-covered bread slices and close the sandwiches.

Spread ½ tablespoon of softened butter on the outer side of each slice of bread.

Heat a large skillet over medium heat and grill the sandwiches for 3 to 4 minutes per side, or until golden brown and cheese is melted.

Remove from skillet and serve the sandwiches warm with your preferred sides.
